Corn and Sweet Potato Chowder
Serves: 4-6
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients:
- 4 bacon strips, chopped into small pieces
- 1 white onion, medium, chopped or diced
- 6 sweet potatoes, peeled and diced
- 2 cans whole kernel corn
- 1 can cream of corn
- 1 cup water Salt and pepper
Instructions:
- In a soup pot or deep skillet, cook the bacon.
- Add the onion and cook until the onion is transparent.
- Add the water and the juice from the cans of kernel corn, let it boil.
- Once the liquid is boiling, add the sweet potatoes and cook until the potatoes are tender.
- Add the kernel corn and cream of corn.
- Season with salt and pepper.
